OPERATION DAGGER: FROM HIT TO LEGEND

Operation Dagger has been on the list of the World’s 50 Best Bars for two consecutive years and taking The Bar Awards Singapore 2016’s Most Creative Cocktail Bar as well as receiving so many other accolades over the years – but rather than fading like many watering-holes do, Operation Dagger seems to slowly grow into the folklore of Singapore.

Operation Dagger is no longer the ‘secret bar’ it once was, today it is very much mainstream, but you still get that mystery feel when you visit this establishment – when entering and walking down the stairs into the bar you still feel like you are in the know of Singapore’s most exciting secret.

This hidden underground bar, which still ranks number 19th on Asia’s 50 Best Bars list and number 23 on The World’s 50 Best Bars list, has a raw concrete and sleek minimalist look with a ceiling of thousands of light bulbs dimly illuminating magical apothecary-like vibes from the unbranded bottles and the handmade drinks, which are still as unique as they always were.

Creative bartender-owner Luke Whearty really utilizes culinary influences and techniques in his creations to keep pushing the boundaries of the local cocktail scene – and although others bars have caught up and are using similar equipment and techniques, he still remains able to add new addition to his menu, whether he goes for Omakase or a series of food and cocktail pairings. For Luke it seems to all be about flavour-centric, sensory experiences; so much that the menu doesn’t even indicate the type of alcohol used in each drink – just the ingredients used. This gives bar-goers an experience that’s free of preconceptions, and all about tastes and textures, which is why he has replaced all brand-named bottles with brown apothecary-style bottles lining the bar to keep things extra top secret – because these bottles are actually filled with spirits that have been re-distilled and re-engineered with various ingredients to pack more emphasis into the flavours.

These guys truly know what they’re doing, so go ahead and let the bartender do the choosing and do not shy-away when they offer some of their spot-on three- or five-course omakase menu, which includes drinks with snack pairings – because Operation Dagger is today a Legend and at KL100 we highly recommend a visit if you have never been.
