From Fukuoka, Japan, Owner-Chef Takasaki Masahiko will be serving an Edomae-style omakase menu, with a cooking philosophy marked by ‘gomi goshiki goho’ – five flavours, colours, and cooking techniques. Chef Masahiko achieves the right balance between rice and topping, differentiating his sushi by using long-stored rice, and seasoning it with only salt and Akazu (Red Vinegar). He is also particular about changing the firmness and flavour depending on the season and ingredient.
